Sage is a handsome shrub with downy grey-green leaves and blue flowers that grows to 60cm. It is used extensively in cooking, in stuffing, sauces, cheeses and pork dishes.

Sowing and Growing

Sow indoors a few weeks before the last spring frost or outside after the last spring frost. The seeds germinate in 7 – 14 days. Plant in a well drained soil that is rich in organic matter. Keep the soil on the drier side when the sage herb matures for the best leaf aroma. The sage herb survives during the winter provided that it is protected with cloches or it is moved in a glass house. Every spring, prune to 2/3 of its height to encourage a fresh and bushy growth. Never let your plants to complete their flowering cycle and produce seeds because they will die out a couple of weeks later. Sage is a great companion plant of tomatoes and they protect carrots and cabbages from insects.
